Pizza Dough

 

 
This pizza dough recipe has to be the best I've ever had! I highly recommend it to all of my followers and anyone who loves to cook fresh, homemade.....everything! Pizza is actually a very family friendly, economical meal if you know how. I simply use budget bacon, tinned pineapple and homemade sauce using tomato paste and a bit of imagination. I always put a little cheese on first and then the ingredients. This helps to bond everything so it doesn't fall off. And we all know how annoying that can be!! Cheese, a few cracks of salt and pepper, drizzle of oil and maybe some Italian herbs. It doesn't get easier than this and you will never buy pizza again once you know how good it tastes and how easy and cheap it is to make yourself!!! Hope you all have as much fun as I had making pizza!

        
 

375ml (1 1/2 cups) warm water

 2 tsp (7g/1 sachet) dried yeast

 Pinch of caster sugar

 600g (4 cups) plain flour

 1 tsp salt

 60ml (1/4 cup) olive oil, plus extra for brushing

1. Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour and salt in a large bowl and make a well in the centre. Add the yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until the mixture is combined. Use your hands to bring the dough together in the bowl.

2. Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught-free place to rise for 30 minutes or until dough doubles in size.

Turkish Delight Truffles

 

With Christmas approaching fast I thought you'd all like to try these moorish little tempters!

 
 
  
 
        20g (1/4 cup) desiccated coconut
  • 300g good quality dark chocolate, coarsely chopped
  • 125ml (1/2 cup) thickened cream
  • 2 55g Turkish Delight chocolate bars (Fry's brand), finely chopped
  • 250g milk chocolate melts

        Step 1
    Place the coconut in a small frying pan over medium heat. Cook, stirring, for 3 minutes or until the coconut is golden brown and aromatic. (See microwave tip 1.) Set aside.


    Step 2
    Place the chocolate and cream in a heatproof bowl over a saucepan half filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir occasionally until the chocolate melts and the mixture is smooth. (See microwave tip 2.) Remove from the pan. Stir in the coconut and chocolate bars. Cover with plastic wrap and place in the fridge for 6 hours or until firm enough to roll into balls.
    Step 3


    Line 2 trays with non-stick baking paper. Use a melon baller or a teaspoon to scoop out 1 1/2 tsp of the chocolate mixture and use your hands to roll into a ball. Place on a lined tray. Repeat with remaining chocolate mixture. Place in the freezer for 10 minutes or until firm.
    Step 4


    Place the milk chocolate melts in a medium, heatproof bowl and place over a pan of gently simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir gently for 5 minutes or until the chocolate melts and is smooth. (See microwave tip 3.) Remove from the pan.
    Step 5


    Use 2 forks to evenly coat each truffle in the melted chocolate. Remove the truffle, tapping the fork handle gently on the edge of the bowl to shake off any excess chocolate mixture. Use a small spatula to carefully slide the truffle onto the remaining lined tray. Repeat with remaining truffles and melted chocolate. Set the coated truffles aside at room temperature for 5-10 minutes or until set.

    Might look and sound fiddly, but they really aren't, and they are soooo worth it!!! I nearly ate all of them myself! Please tell me your experiences making them.




    My Own Gourmet Roast Rub

     
     
    3 Garlic cloves
    Dried Rosemary
    Dried Thyme
    Dried Oregano
    3 Tablespoons of Oil
    3 Teaspoons of Sweet Chilli Sauce
    2 Tablespoons of Tomato Sauce
    1 Tablespoons of sugar
    Salt and Pepper
     
    Combine all in a food processor or use a mortar and pestle like I do.
    Maple syrup provides the best rub instead of sugar, but I find it so expensive!
    So if you do have it, don't fail to use it, absolutely divine!
